導入アドオンが豊富なのでいろいろ方法はあると思いますが…
「Update Issue Custom Field」 は JIRA Suite Utilities アドオンの機能です。
トランジションが実行された時点の時刻でよければ
Custom Field Value: ※ に以下のような 「%%CURRENT_DATETIME%%」 を設定すればよいかと思います。

お世話になっております。掲題の件、以下具体的に質問させて頂きます。
お分かりの方いらっしゃいましたら、ご教示頂けますと幸甚です。
掲題の要件を実現するには、いくつかの選択肢があるかと思いますが、
Post Function "Update Issue Custom Field" が適切かと考えました。
（もちろん、他のアプローチ方法があれば、ご指摘下さい。）
この場合、Custom Field Value: には、日時自動更新に関する何らかのCodeを
書く必要があるかと思いますが、適切なサンプルはございますでしょうか？
「Create issue」押下げ→[xxx Date Time]（Custom Field）に日時を自動反映させたいです。
